Looking for a quick, comforting weeknight dinner that won’t leave you with a mountain of dishes? This One-Pot Garlic Parmesan Chicken and Rice is packed with savory flavor, uses simple ingredients, and is ready in just 30 minutes.

Recipe Details

  • Prep time: 10 minutes
  • Cook time: 20 minutes
  • Total time: 30 minutes
  • Servings: 4
  • Course: Dinner / Main Dish
  • Cuisine: American / Italian-Inspired

Ingredients

  • The Chicken: 1 lb boneless, skinless chicken breasts (cut into bite-sized cubes)
  • Seasoning: 1 tsp garlic powder, 1 tsp Italian seasoning, salt, and black pepper to taste
  • Aromatics: 1 tbsp olive oil, 2 tbsp butter, 3 cloves garlic (minced)
  • The Base: 1 cup long-grain white rice (rinsed and drained)
  • The Liquid: 2 cups low-sodium chicken broth
  • The Finish: 1/2 cup freshly grated parmesan cheese, plus chopped fresh parsley for garnish

Instructions

  1. Season the Chicken: Pat the chicken cubes dry with a paper towel. Season them evenly with garlic powder, Italian seasoning, salt, and black pepper.
  2. Sear the Chicken: Heat the olive oil and 1 tablespoon of butter in a large skillet or Dutch oven over medium-high heat. Add the chicken and sear until golden brown on all sides (about 4–5 minutes). Remove the chicken from the pan and set it aside on a plate.
  3. Sauté the Garlic: Turn the heat down to medium. Add the remaining 1 tablespoon of butter and the minced garlic to the same skillet. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Toast the Rice: Add the rinsed white rice directly into the skillet, stirring it around for 1–2 minutes so it absorbs the garlic butter flavors.
  5. Simmer: Pour in the chicken broth and bring everything to a boil. Once boiling, add the cooked chicken back into the skillet on top of the rice.
  6. Cover and Cook: Reduce the heat to low, cover the skillet with a tight-fitting lid, and let it simmer undisturbed for 15–18 minutes, or until the liquid is absorbed and the rice is tender.
  7. Add Cheese & Serve: Remove the skillet from the heat. Stir in the freshly grated parmesan cheese until melted and creamy. Garnish with fresh parsley and serve hot!

Chef’s Tips for Success

  • Don’t skip rinsing the rice: Rinsing removes excess starch so your rice turns out fluffy and separate instead of sticky.
  • Use freshly grated parmesan: Pre-shredded bagged cheese contains anti-caking agents that prevent it from melting smoothly into a creamy sauce.
